Hi, Rick. I ride centuries a lot - I did 9 last year - and am doing the Tour de Palm Springs, also. So I'll see ya on the road. You've probably already heard this...but don't think of the ride as 100 miles, think of it as 4 20 mile rides. Stop every 20 miles or at each SAG stop for a little bit. Enough to stretch, rehydrate and eat something. Don't stay long b/c your legs will not like it when you get back on the bike. You don't have to stop at every SAG and you don't have to stop every 20 miles, but for people who have not done centuries before, this is a good rule.
